Prep:

  1. - peel and crush garlic.
  2. - peel and thinly slice carrots.
  3. - wash and thinly slice green spring onions.
  4. - pop a pan of water on to boil.
  5. - cut small florets from broccoli, trim stem, halve and thinly slice.

Method:

  1. Boil noodles for 3-4 minutes until tender. Drain, toss in a little oil (1 tsp/person) and cover to keep warm.
  2. Heat oil (0.5 tbsp/person) in a wok over a high heat until very hot. Add broccoli and carrots. Stir-fry for about 2 to 5 minutes, or until almost tender. Add garlic and stir fry for a further minute.
  3. Add hoisin sauce, cashews, sesame seeds and sesame oil (if you have it). Stir-fry until hot. Add noodles and whites of spring onions.
  4. Serve sprinkled with remaining onions.
