Sesame Broccoli And Cashew Noodle Stir-Fry
Ingredients for One Person
- 120g Grams Broccoli
- 1 Green Spring Onions
- 1 tbsp Tbsp Sesame Seeds
- 1 tbsp Tbsp Roasted Cashews
- 1 Udon Noodles Packet

Ingredients for Six People
- 720g Grams Broccoli
- 6 tbsp Tbsp Sesame Seeds
- 6 tbsp Tbsp Roasted Cashews
- 6 Udon Noodles Packet
- 3 Green Spring Onions
- 3 tbsp Tbsp Hoisin Sauce
- 3 Cloves Garlic Clove
- 3 Carrots
- 3 tbsp Sesame Or Extra Virgin Olive Oil*

Prep:
- - peel and crush garlic.
- - peel and thinly slice carrots.
- - wash and thinly slice green spring onions.
- - pop a pan of water on to boil.
- - cut small florets from broccoli, trim stem, halve and thinly slice.
Method:
- Boil noodles for 3-4 minutes until tender. Drain, toss in a little oil (1 tsp/person) and cover to keep warm.
- Heat oil (0.5 tbsp/person) in a wok over a high heat until very hot. Add broccoli and carrots. Stir-fry for about 2 to 5 minutes, or until almost tender. Add garlic and stir fry for a further minute.
- Add hoisin sauce, cashews, sesame seeds and sesame oil (if you have it). Stir-fry until hot. Add noodles and whites of spring onions.
- Serve sprinkled with remaining onions.
