Almond Chicken With Tomato Rocket Salad
Ingredients for One Person

- 0 cup Panko Breadcrumbs

- 150 Each Free Range Chicken Breast
- 1 tbsp Flaked Almonds

Ingredients for Four People

- 120 g Rocket
- 1 Each Red Onion
- 2 cup Panko Breadcrumbs
- 2 Each Lemon
- 600 Each Free Range Chicken Breast
- 4 tbsp Flaked Almonds
- 6 Each Extra Virgin Olive Oil - PANTRY ITEM
- 2 Each Eggs - PANTRY ITEM
- 2 tbsp Chicken Spice-Mix
- 200 g Cherry Tomatoes
- 600 g Chat Potatoes
Ingredients for Six People
- 0 White Wine Vinegar - PANTRY ITEM
- 0 Salt & Pepper - PANTRY ITEM
- 180 g Rocket
- 2 Each Red Onion
- 2 cup Panko Breadcrumbs
- 3 Each Lemon
- 900 Each Free Range Chicken Breast
- 6 tbsp Flaked Almonds
- 9 Each Extra Virgin Olive Oil - PANTRY ITEM
- 3 Each Eggs - PANTRY ITEM
- 3 tbsp Chicken Spice-Mix
- 300 g Cherry Tomatoes
- 900 g Chat Potatoes
Prep:
- Crack and beat eggs in a small bowl.
- Chop almonds and mix with breadcrumbs and spice-mix.
- Rinse and halve tomatoes.
- Quarter potatoes.
- Peel, halve and thinly slice onion.
- Rinse baby rocket.
Method:
- Half cover potatoes with cold salted water in a saucepan and bring to the boil. Boil for 6-8 minutes until tender.
- Cut each chicken breast in half horizontally through the side, to give two pieces.
- Heat oil in a large, non-stick frying pan over a medium to high heat. Add chicken in batches. Cook for about 3 to 4 minutes on each side, or until golden and cooked through.
- To make salad, place tomatoes, rocket and onion in a large bowl. Mix 3 parts oil to one part vinegar and drizzle over the salad. Season with salt and pepper. Drizzle potatoes with a dash of olive oil and season with salt and pepper.
- Dip chicken, one piece at a time, into egg in a shallow bowl. Coat in breadcrumb mixture, pressing mixture on firmly.
- Serve chicken with salad, potatoes and lemon wedges.
