- 6 tsp Cajun spice mix
- 120 grams baby spinach
- 1 cup grated tasty cheese
- 120 grams mixed salad leaves
- 3 tomatoes
- 2 lemons

Prep:
- wash and quarter chat potatoes
- wash and chop parsley
- wash baby spinach
- wash mixed salad leaves
- wash and chop tomatoes
Method:
- Boil potatoes in a large saucepan of water for about 10 minutes or until tender. Drain. Stir through parsley. Season with salt and pepper. Cover to keep warm.
- Meanwhile, toss chicken with spice mix in a bowl.
- Heat oil in a extra large, non-stick, frying pan over a high heat. Add chicken. Cook for about 3 minutes on each side, or until golden brown.
- Top evenly with spinach then cheese. Cover with lid. Cook over a low heat for about 2 to 3 minutes, or until chicken is cooked through and cheese is melted.
- Toss salad leaves with tomatoes in a bowl. Season with salt and pepper.
- Serve chicken with potatoes, salad and lemon cheeks.
