Ingredients for Four

  1. 900 grams chat potaotes
  2. 900 grams chicken breast fillets
  3. 30 grams parsley
  4. 6 tsp Cajun spice mix
  5. 120 grams baby spinach
  6. 1 cup grated tasty cheese
  7. 120 grams mixed salad leaves
  8. 3 tomatoes
  9. 2 lemons
  10. 6 tsp olive oil - PANTRY ITEM
  11. salt and pepper - PANTRY ITEM

Prep:

  1. wash and quarter chat potatoes
  2. wash and chop parsley
  3. wash baby spinach
  4. wash mixed salad leaves
  5. wash and chop tomatoes

Method:

  1. Boil potatoes in a large saucepan of water for about 10 minutes or until tender. Drain. Stir through parsley. Season with salt and pepper. Cover to keep warm.
  2. Meanwhile, toss chicken with spice mix in a bowl.
  3. Heat oil in a extra large, non-stick, frying pan over a high heat. Add chicken. Cook for about 3 minutes on each side, or until golden brown.
  4. Top evenly with spinach then cheese. Cover with lid. Cook over a low heat for about 2 to 3 minutes, or until chicken is cooked through and cheese is melted.
  5. Toss salad leaves with tomatoes in a bowl. Season with salt and pepper.
  6. Serve chicken with potatoes, salad and lemon cheeks.
