Curried Vegetable Noodles With Cucumber And Peanuts

Ingredients for One

  1. 50 grams egg noodles
  2. 80 grams broccoli
  3. 5 grams coriander
  4. 0.5 cloves garlic
  5. 1 Lebanese cucumber
  6. 1 red onion
  7. 1 zucchini
  8. 1 tsp curry powder
  9. 1 tbsp roasted peanuts
  10. 0.5 tsp tomato sauce - PANTRY ITEM
  11. 0.5 tbsp soy sauce - PANTRY ITEM
  12. extra virgin olive oil - PANTRY ITEM

Ingredients for Two

  1. 100 grams egg noodles
  2. 160 grams broccoli
  3. 10 grams coriander
  4. 1 cloves garlic
  5. 1 Lebanese cucumber
  6. 1 red onion
  7. 1 zucchini
  8. 2 tsp curry powder
  9. 2 tbsp roasted peanuts
  10. 1 tsp tomato sauce - PANTRY ITEM
  11. 1 tbsp soy sauce - PANTRY ITEM
  12. extra virgin olive oil - PANTRY ITEM

  1. 200 grams egg noodles
  2. 320 grams broccoli
  3. 20 grams coriander
  4. 2 cloves garlic
  5. 1 Lebanese cucumber
  6. 1 red onion
  7. 1 zucchini
  8. 4 tsp curry powder
  9. 4 tbsp roasted peanuts
  10. 2 tsp tomato sauce - PANTRY ITEM
  11. 2 tbsp soy sauce - PANTRY ITEM
  12. extra virgin olive oil - PANTRY ITEM

Ingredients for Four

  1. 300 grams egg noodles
  2. 480 grams broccoli
  3. 30 grams coriander
  4. 3 cloves garlic
  5. 2 Lebanese cucumber
  6. 2 red onion
  7. 2 zucchini
  8. 6 tsp curry powder
  9. 6 tbsp roasted peanuts
  10. 3 tsp tomato sauce - PANTRY ITEM
  11. 3 tbsp soy sauce - PANTRY ITEM
  12. extra virgin olive oil - PANTRY ITEM

Prep:

  1. pop a pan of water on to boil
  2. wash cucumber
  3. peel, halve and thinly slice onion
  4. wash and cut zuchhini
  5. wash broccoli into florets, slice stem
  6. peel and crush garlic
  7. wash and chop coriander, keeping stems

Method:

  1. Cut cucumber in half lengthways. Scoop out and discard seeds. Thinly slice diagonally.
  2. Boil noodles for 3-4 minutes until tender, Drain
  3. Heat oil in a wok over a high heat. Add onion, zucchini and broccoli. Stir-fry for about 2 to 4 minutes, or until almost tender.
  4. Add garlic, coriander stems and curry powder. Stir-fry for 30 seconds, or until fragrant. Add noodles and combined sauces. Stir-fry until hot.
  5. Serve topped with cucumber, peanuts and coriander.
