- 300 grams egg noodles
- 480 grams broccoli
- 30 grams coriander
- 3 cloves garlic
- 2 Lebanese cucumber
- 2 red onion
- 2 zucchini
- 6 tsp curry powder
- 6 tbsp roasted peanuts
- 3 tsp tomato sauce - PANTRY ITEM
- 3 tbsp soy sauce - PANTRY ITEM
- extra virgin olive oil - PANTRY ITEM
Prep:
- pop a pan of water on to boil
- wash cucumber
- peel, halve and thinly slice onion
- wash and cut zuchhini
- wash broccoli into florets, slice stem
- peel and crush garlic
- wash and chop coriander, keeping stems
Method:
- Cut cucumber in half lengthways. Scoop out and discard seeds. Thinly slice diagonally.
- Boil noodles for 3-4 minutes until tender, Drain
- Heat oil in a wok over a high heat. Add onion, zucchini and broccoli. Stir-fry for about 2 to 4 minutes, or until almost tender.
- Add garlic, coriander stems and curry powder. Stir-fry for 30 seconds, or until fragrant. Add noodles and combined sauces. Stir-fry until hot.
- Serve topped with cucumber, peanuts and coriander.
