Honey Chicken And Noodle Stir-Fry

Ingredients for One

  1. 150 grams free range chicken breast
  2. 70 grams broccoli
  3. 50 grams egg noodles
  4. 0.5 carrots
  5. 1 red capsicums
  6. 1 lemon
  7. 1 onions
  8. 0.5 cloves garlic
  9. 1 tsp water
  10. 0.5 tsp cornflour - PANTRY ITEM
  11. 2 tbsp soy sauce - PANTRY ITEM
  12. 0.5 tbsp honey - PANTRY ITEM

Ingredients for Two

  1. 300 grams free range chicken breast
  2. 140 grams broccoli
  3. 100 grams egg noodles
  4. 1 carrots
  5. 1 red capsicums
  6. 1 lemon
  7. 1 onions
  8. 1 cloves garlic
  9. 2 tsp water
  10. 1 tsp cornflour - PANTRY ITEM
  11. 4 tbsp soy sauce - PANTRY ITEM
  12. 1 tbsp honey - PANTRY ITEM

Ingredients for Three

  1. 600 grams free range chicken breast
  2. 280 grams broccoli
  3. 200 grams egg noodles
  4. 2 carrots
  5. 1 red capsicums
  6. 1 lemon
  7. 1 onions
  8. 2 cloves garlic
  9. 4 tsp water
  10. 2 tsp cornflour - PANTRY ITEM
  11. 8 tbsp soy sauce - PANTRY ITEM
  12. 2 tbsp honey - PANTRY ITEM

Ingredients for Four

  1. grams free range chicken breast
  2. 900 grams broccoli
  3. 420 grams egg noodles
  4. 300 carrots
  5. 3 red capsicums
  6. 2 lemon
  7. 2 onions
  8. 2 cloves garlic
  9. 3 tsp water
  10. 6 tsp cornflour - PANTRY ITEM
  11. 3 tbsp soy sauce - PANTRY ITEM
  12. 12 tbsp honey - PANTRY ITEM

Prep:

  1. pop a pan of water on to boil
  2. cut chicken into thin strips
  3. peel and thinly slice onions
  4. peel and crush garlic
  5. peel and thinly slice carrots
  6. rinse, trim and cut broccoli into florets
  7. rinse and thinly slice red capsicums
  8. rinse and zest lemon

Method:

  1. To make honey soy sauce, blend cornflour with water in a jug until smooth. Stir in soy sauce, lemon juice and zest. Set aside.
  2. Boil noodles for 5-6 minutes until tender. Drain, drizzle with a little oil and cover to keep warm.
  3. Toss chicken in a little oil. Heat a large, non-stick wok over a high heat until hot. Add chicken in 300g batches. Stir-fry for about 3 to 4 minutes, or until browned and cooked. Remove.
  4. Heat a little oil in same hot wok. Add onion, garlic, carrots, broccoli and capsicum. Stir-fry for about 4 minutes, or until just tender.
  5. Return chicken to wok with noodles and sauce. Stir-fry for 2 minutes, or until sauce boils and thickens. Serve immediately.
