- 280 grams broccoli
- 200 grams egg noodles
- 2 carrots
- 1 red capsicums
- 1 lemon

- 8 tbsp soy sauce - PANTRY ITEM
- 2 tbsp honey - PANTRY ITEM

- grams free range chicken breast
- 900 grams broccoli
- 420 grams egg noodles
- 300 carrots
- 3 red capsicums
- 2 lemon
- 2 onions
- 2 cloves garlic
- 3 tsp water
- 6 tsp cornflour - PANTRY ITEM
- 3 tbsp soy sauce - PANTRY ITEM
- 12 tbsp honey - PANTRY ITEM
Prep:
- pop a pan of water on to boil
- cut chicken into thin strips
- peel and thinly slice onions
- peel and crush garlic
- peel and thinly slice carrots
- rinse, trim and cut broccoli into florets
- rinse and thinly slice red capsicums
- rinse and zest lemon
Method:
- To make honey soy sauce, blend cornflour with water in a jug until smooth. Stir in soy sauce, lemon juice and zest. Set aside.
- Boil noodles for 5-6 minutes until tender. Drain, drizzle with a little oil and cover to keep warm.
- Toss chicken in a little oil. Heat a large, non-stick wok over a high heat until hot. Add chicken in 300g batches. Stir-fry for about 3 to 4 minutes, or until browned and cooked. Remove.
- Heat a little oil in same hot wok. Add onion, garlic, carrots, broccoli and capsicum. Stir-fry for about 4 minutes, or until just tender.
- Return chicken to wok with noodles and sauce. Stir-fry for 2 minutes, or until sauce boils and thickens. Serve immediately.
