- 20 grams mint

- 900 grams lamb rump
- 900 grams chat potatoes
- 300 grams green beans
- 30 grams mint
- 2 lemon
- 3 red apples
- 3 green spring onions
- 3 red chilli
- 6 tsp red wine vinegar - PANTRY ITEM
- extra virgin olive oil - PANTRY ITEM
- salt & pepper - PANTRY ITEM
Prep:
- preheat oven to 240C degrees
- halve chat potatoes
- wash and cut red apples into matchsticks
- wash and remove leaves from mint
- wash and thinly slice green spring onions
- finely chop chilli
- zest lemon and cut into wedges
- trim green beans
Method:
- Place potatoes on an oven tray lined with baking paper. Drizzle with extra virgin olive oil and season with salt and pepper. Toss to combine. Cook in the oven for about 20 minutes, or until golden and tender.
- Meanwhile, make salsa by tossing together all the remaining ingredients with olive oil, lemon zest and a squeeze of lemon juice. Use as little or as much chilli as you like. Season with salt and pepper.
- Pop a little salted water on to boil. Cook beans for 3-4 minutes until just tender. Drain the beans and dress with a little oil and lemon juice.
- Toss lamb with olive oil and season well with salt and pepper. Heat a frying pan over a high heat. Add lamb and cook for about 3 minutes on each side, or until cooked to your liking. Remove. Rest, loosely covered with foil.
- Serve lamb with potatoes, salsa and a side of green beans.
