Lentil Burgers With Sweet Potato Chips

Ingredients for One

  1. 200 grams lentils
  2. 150 grams sweet potato
  3. 20 grams mixed salad
  4. 1 tomato
  5. 1 tbsp capsicum strips
  6. 0.5 tbsp Tuscan spices
  7. 0.5 dill cucumber
  8. 1 avocado
  9. 0.25 cup breadcrumbs
  10. 1 burger buns

  1. 400 grams lentils
  2. 300 grams sweet potato
  3. 40 grams mixed salad
  4. 1 tomato
  5. 2 tbsp capsicum strips
  6. 1 tbsp Tuscan spices
  7. 1 dill cucumber
  8. 1 avocado
  9. 0.5 cup breadcrumbs
  10. 2 burger buns
  11. 1 eggs - PANTRY ITEM

  1. 800 grams lentils
  2. 600 grams sweet potato
  3. 80 grams mixed salad
  4. 2 tomato
  5. 4 tbsp capsicum strips
  6. 2 tbsp Tuscan spices
  7. 2 dill cucumber
  8. 1 avocado
  9. 1 cup breadcrumbs
  10. 4 burger buns
  11. 2 eggs - PANTRY ITEM

Ingredients for Four

  1. 1200 grams lentils
  2. 900 grams sweet potato
  3. 120 grams mixed salad
  4. 3 tomato
  5. 6 tbsp capsicum strips
  6. 3 tbsp Tuscan spices
  7. 3 dill cucumber
  8. 2 avocado
  9. 1.5 cup breadcrumbs
  10. 6 burger buns
  11. 3 eggs - PANTRY ITEM
  12. extra virgin olive oil - PANTRY ITEM
  13. salt and pepper - PANTRY ITEM

Prep:

  1. pre-heat oven to 220°C
  2. peel and cut sweet potato into 1cm thick chips
  3. split and toast burger buns
  4. wash mixed salad
  5. wash and thinly slice tomato
  6. mash avocado
  7. drain and rinse lentils
  8. slice dill cucumbers diagonally
  9. drain capsicum strips

Method:

  1. Toss sweet potato chips in olive oil, then season with salt and pepper. Spread onto a large oven tray and cook in the oven for about 20 minutes until browned.
  2. Put the lentils, egg, spices, capsicum and breadcrumbs into a food processor. Process until just combined. Shape 1⁄2 cups of mixture into patties with clean wet hands.
  3. Heat oil in a large, non-stick frying pan over a medium to high heat. Add patties, avoid crowding the pan. Cook for about 2 minutes on each side or until browned. Drain on absorbent kitchen paper.
  4. Top the bun halves with mixed salad, tomato, patties, avocado and dill cucumbers. Serve with the chips.
