- 1200 grams lentils
- 900 grams sweet potato
- 120 grams mixed salad
- 3 tomato
- 6 tbsp capsicum strips
- 3 tbsp Tuscan spices
- 3 dill cucumber
- 2 avocado
- 1.5 cup breadcrumbs
- 6 burger buns
- 3 eggs - PANTRY ITEM
- extra virgin olive oil - PANTRY ITEM
- salt and pepper - PANTRY ITEM
Prep:
- pre-heat oven to 220°C
- peel and cut sweet potato into 1cm thick chips
- split and toast burger buns
- wash mixed salad
- wash and thinly slice tomato
- mash avocado
- drain and rinse lentils
- slice dill cucumbers diagonally
- drain capsicum strips
Method:
- Toss sweet potato chips in olive oil, then season with salt and pepper. Spread onto a large oven tray and cook in the oven for about 20 minutes until browned.
- Put the lentils, egg, spices, capsicum and breadcrumbs into a food processor. Process until just combined. Shape 1⁄2 cups of mixture into patties with clean wet hands.
- Heat oil in a large, non-stick frying pan over a medium to high heat. Add patties, avoid crowding the pan. Cook for about 2 minutes on each side or until browned. Drain on absorbent kitchen paper.
- Top the bun halves with mixed salad, tomato, patties, avocado and dill cucumbers. Serve with the chips.
