(Almost Ready) Vegetarian Lasagne With Pear And Rocket Salad

Ingredients for One

  1. 250 grams lasagne / veg lasagne
  2. 30 grams rocket
  3. 1 tbsp grated parmesan cheese
  4. 1 green pears
  5. 1 eschalot
  6. balsamic vinegar - PANTRY ITEM
  7. extra virgin olive oil - PANTRY ITEM

  1. 500 grams lasagne / veg lasagne
  2. 60 grams rocket
  3. 2 tbsp grated parmesan cheese
  4. 1 green pears
  5. 1 eschalot
  6. balsamic vinegar - PANTRY ITEM
  7. extra virgin olive oil - PANTRY ITEM

  1. 1000 grams lasagne / veg lasagne
  2. 120 grams rocket
  3. 4 tbsp grated parmesan cheese
  4. 1 green pears
  5. 2 eschalot
  6. balsamic vinegar - PANTRY ITEM
  7. extra virgin olive oil - PANTRY ITEM

Ingredients for Four

  1. 1500 grams lasagne / veg lasagne
  2. 180 grams rocket
  3. 6 tbsp grated parmesan cheese
  4. 2 green pears
  5. 3 eschalot
  6. balsamic vinegar - PANTRY ITEM
  7. extra virgin olive oil - PANTRY ITEM

Prep:

  1. pre-heat the oven to 180 C
  2. wash rocket
  3. wash pear, remove core and slice
  4. peel and thinly slice eschallot

Method:

  1. Remove any plastic from the lasagne and place in the pre heated oven for about 20 minutes.
  2. Meanwhile, gently combine rocket, onion and pear, season well with salt & pepper and dress with olive oil and balsamic vinegar using a ratio of 3 parts oil to1 part vinegar.
  3. When piping hot, remove the lasagne from the oven and serve alongside salad and sprinkle with parmesan.
