- 500 grams spaghetti
- 280 grams broccoli
- 20 grams coriander

- 900 grams salmon fillets
- 750 grams spaghetti
- 420 grams broccoli
- 30 grams coriander
- 30 grams parsley
- 6 tbsp almonds
- 6 tbsp finely grated parmesan
- 3 tomato
- 3 clove garlic
- 2 lemon
- extra virgin olive oil - PANTRY ITEM
- salt and pepper - PANTRY ITEM
Prep:
- pop a large saucepan of salted water on to boil
- wash and cut broccoli into florets
- wash and chop tomato
- wash coriander and parsley
- peel garlic
- juice lemon
Method:
- To make the pesto, blend the herbs, almonds, garlic, olive oil, lemon juice, salt and pepper in a food processor until combined.
- Cook the spaghetti in salted boiling water for 9 minutes until al dente. Add the broccoli during the last 2 minutes of cooking. Drain, reserving a mug of the cooking water.
- Meanwhile, place the salmon in a deep frying pan pr large saucepan. Cover with cold water and bring to the boil. Gently simmer the salmon for 3 to 5 minutes or until cooked to you liking. Transfer to a plate to drain. Flake the salmon.
- Return the spaghetti to the saucepan and add pesto, broccoli and tomato. Toss to combine, adding a little reserved cooking water until the spaghetti is loose and glossy.
- Serve the salmon over the spaghetti and sprinkle with parmesan.
