Salmon And Broccoli Spaghetti With Coriander Almond Pesto

  1. 150 grams salmon fillets

  1. 300 grams salmon fillets
  2. 250 grams spaghetti
  3. 140 grams broccoli
  4. 10 grams coriander
  5. 10 grams parsley
  6. 2 tbsp almonds
  7. 2 tbsp finely grated parmesan

  10. 1 lemon

  2. 500 grams spaghetti
  3. 280 grams broccoli
  4. 20 grams coriander
  5. 20 grams parsley
  6. 4 tbsp almonds
  7. 4 tbsp finely grated parmesan
  8. 2 tomato
  9. 2 clove garlic
  10. 1 lemon
  11. extra virgin olive oil - PANTRY ITEM
  12. salt and pepper - PANTRY ITEM

Ingredients for Four

  1. 900 grams salmon fillets
  2. 750 grams spaghetti
  3. 420 grams broccoli
  4. 30 grams coriander
  5. 30 grams parsley
  6. 6 tbsp almonds
  7. 6 tbsp finely grated parmesan
  8. 3 tomato
  9. 3 clove garlic
  10. 2 lemon
  11. extra virgin olive oil - PANTRY ITEM
  12. salt and pepper - PANTRY ITEM

Prep:

  1. pop a large saucepan of salted water on to boil
  2. wash and cut broccoli into florets
  3. wash and chop tomato
  4. wash coriander and parsley
  5. peel garlic
  6. juice lemon

Method:

  1. To make the pesto, blend the herbs, almonds, garlic, olive oil, lemon juice, salt and pepper in a food processor until combined.
  2. Cook the spaghetti in salted boiling water for 9 minutes until al dente. Add the broccoli during the last 2 minutes of cooking. Drain, reserving a mug of the cooking water.
  3. Meanwhile, place the salmon in a deep frying pan pr large saucepan. Cover with cold water and bring to the boil. Gently simmer the salmon for 3 to 5 minutes or until cooked to you liking. Transfer to a plate to drain. Flake the salmon.
  4. Return the spaghetti to the saucepan and add pesto, broccoli and tomato. Toss to combine, adding a little reserved cooking water until the spaghetti is loose and glossy.
  5. Serve the salmon over the spaghetti and sprinkle with parmesan.
